Chef de Partie – Butcher

We are seeking an experienced Butchery Chef de Partie to work onboard international cruise ships. The successful candidate will supervise the daily production of the butchery section, coordinate assigned team members, and ensure the correct preparation of meat and seafood products. The position requires consistent compliance with recipes, portion controls, quality standards, and food safety regulations.

Mandatory requirements

  • Professional qualification in butchery from a recognized training institution is preferred.
  • At least five years of experience in large-scale butchery operations.
  • Previous experience on cruise ships, in large hotels, resorts, or high-volume food operations is highly desirable.
  • Proven experience identifying, preparing, deboning, cutting, trimming, and portioning different types of meat.
  • Experience cleaning, preparing, and processing fish and seafood.
  • Knowledge of appropriate food-defrosting, holding, and storage procedures.
  • Strong knowledge of public health regulations, HACCP requirements, food safety, and waste management.
  • Experience in portion control, production planning, and inventory management.
  • Ability to supervise, train, and motivate assigned team members.
  • Good command of written and spoken English.
  • Strong organizational skills, attention to detail, and commitment to quality.
  • Ability to work effectively in a fast-paced, international, and multicultural environment.

Key Responsibilities

  • Supervise the daily production of the butchery section.
  • Ensure the quality, consistency, and correct preparation of meat and seafood products.
  • Follow established recipes, cutting and trimming methods, portion-control guidelines, and defrosting schedules.
  • Prepare the daily production schedule according to the itinerary, expected demand, and requirements of the different food outlets.
  • Monitor ingredient consumption and inform the Chief Butcher of production requirements.
  • Conduct regular stock checks and maintain the necessary par levels for operations.
  • Assist with the loading, inspection, and proper storage of supplies.
  • Maintain accurate, organized, and accessible recipe files for the assigned section.
  • Participate in daily operational briefings with the Chief Butcher.
  • Supervise and coordinate assigned butchery staff during operational activities.
  • Control portions and production volumes to minimize waste and meet cost targets.
  • Train team members in cutting, trimming, deboning, cleaning, portioning, and product-handling techniques.
  • Coach assigned staff in recipes, culinary techniques, storage procedures, and product presentation.
  • Ensure compliance with hygiene, food safety, and waste-management procedures.
  • Monitor the condition of butchery equipment and immediately report malfunctions or maintenance requirements.
  • Maintain courteous and professional working relationships within an international and multicultural team.

Physical Requirements

This position requires standing for extended periods, working in refrigerated areas, and lifting or moving heavy items in accordance with operational needs. It also involves the frequent use of knives and specialized butchery equipment.
