Demi Chef de partie – Pizza

We are seeking an experienced Demi Chef de Partie specializing in pizza production to work onboard international cruise ships. The successful candidate will support the operations of the vessel’s top-deck pizzeria. This position is responsible for preparing handmade Neapolitan-style pizzas, supervising assigned team members, and ensuring compliance with established recipes, quality standards, and operational targets.

Mandatory requirements

  • At least three years of experience as a pizzaiolo in high-volume handmade pizza production.
  • Formal pizzaiolo certification is preferred.
  • Strong knowledge of Neapolitan pizza production processes and procedures.
  • Experience with dough preparation and fermentation, baking techniques, and ingredient selection.
  • Knowledge of different pizza styles, from traditional varieties to specialty pizzas.
  • Good command of written and spoken English.
  • Strong guest-service orientation and commitment to delivering an excellent passenger experience.
  • Excellent interpersonal and communication skills.
  • A friendly and professional personality with a strong team-oriented attitude.
  • Ability to work effectively in a fast-paced, international, and multicultural environment.

Key Responsibilities

  • Prepare handmade Neapolitan-style pizzas, including traditional varieties such as Margherita and pepperoni, as well as daily specials.
  • Hand-toss and freshly bake pizzas according to established recipes and preparation methods.
  • Ensure the quality, freshness, baking, and presentation of every product.
  • Monitor daily ingredient consumption and report any fluctuations to the Chef de Partie Pizza.
  • Plan ingredient requirements and assist with the preparation of orders.
  • Apply production and portion controls to minimize food waste.
  • Supervise the Commis Pizza Chef during mise en place, production, and baking operations.
  • Train and coach assigned team members in preparation, baking, and presentation techniques.
  • Maintain accurate, organized, and accessible pizza recipe files.
  • Share responsibility with the Chef de Partie Pizza for managing the pizzeria’s budget and meeting cost targets.
  • Continuously improve culinary techniques, production methods, and recipe knowledge.
  • Ensure the correct handling, holding, and presentation of pizza products.
  • Provide friendly and professional service focused on delivering an excellent passenger experience.
  • Work effectively as part of an international and multicultural team.

Physical Requirements

This position requires regular physical activity, including standing for extended periods and lifting or moving heavy items in accordance with operational needs.
