We are seeking an experienced Pastry Chef de Partie to work onboard international cruise ships.
The successful candidate will supervise the daily production of pastries and desserts, ensuring compliance with established recipes, quality standards, food safety regulations, and operational targets.
Key Responsibilities
- Supervise the pastry team and coordinate duties during each shift.
- Ensure that all pastries and desserts are prepared according to established recipes, presentation guidelines, and quality standards.
- Participate in operational meetings with the Executive Pastry & Bakery Chef.
- Conduct briefings with pastry team members at the beginning of each shift.
- Prepare and manage the daily production schedule for the assigned section.
- Monitor portions, preparation processes, storage procedures, and ingredient consumption.
- Apply efficient production methods to minimize waste and control costs.
- Monitor ingredient inventory and plan orders according to production requirements.
- Maintain accurate and up-to-date recipe records.
- Contribute to operational improvements and the introduction of new pastry techniques and trends.
- Train team members in culinary techniques, production methods, recipes, food-holding procedures, and product presentation.
- Support the onboarding and orientation of newly assigned pastry staff.
- Identify and develop high-performing team members with potential for career advancement.
- Maintain respectful and professional working relationships in a multicultural environment.
Physical Requirements
This position requires regular physical activity, including standing for extended periods and lifting or moving heavy items in accordance with operational needs.
